Snowboarding...

3 weeks ago my boss took my coworkers and myself up to the Beavers mountain at Eagle Point to go snowboarding.  It was a good little getaway from work!

I have only been snowboarding 2 or 3 times previously and the last time was 5 years ago.  Needless to say, I fell a Lot. But it was still so much fun. Near the end I started to get the  hang out it and had a fairly good ride... AKA I went about 50 feet before falling again  hahhaha

The next day I was SOOO sore. Snowboarding is a lot of work, especially when you fall a lot!

No bake energy balls!

I have been making this recipe for a few weeks! I usually grab a few and eat them for a quick and easy breakfast or as a snack!. There is no sugar in them and they are super tasty!

Try them out!

No-Bake Energy Bites  -

1 cup oatmeal

1/2 cup peanut butter (or other nut butter)

1/3 cup coconut oil (or honey)

1 cup coconut flakes

1/2 cup ground flaxseed

1/2 cup mini chocolate chips

1 tsp vanilla

(add a little stevia or real maple syrup if you want some sweetener)

Mix everything above in a medium bowl until thoroughly incorporated.  Let chill in the refrigerator for half an hour.  Once chilled, roll into balls and enjoy!  Store in an airtight container and keep refrigerated for up to 1 week.

Combine all ingredients in a bowl

Mix together

Roll into balls

Enjoy!

I FINALLY got this in the mail...

after graduating Months ago....

It's funny that all the hard work I did in school and all I got was a piece of paper!
But I'm excited that I finally got it.  I know plan to work towards my Bachelors degree... sometime.

To celebrate, we went to the park and played, got lunch, went bowling and went for frozen yogurt!!

I sure do love this boy! He is such a sweet, smiley boy!
